Why Mexican Indian fusion recipe? Well, Indian food, including butter chicken, paneer tikka, and chicken tikka among tons of other recipes, is getting increasingly popular across the world. Similarly, Mexican food is also revered by the people very much.
Well, that's the reason I created, tried, tested, tasted (several times), and perfected this simple yet flavorsome Indian Mexican fusion recipe and I'm super excited to share the recipe of Paneer Tacos with you all!
Please note that I'm an instinctive cook who doesn't work with measures and weights. My inherent cooking skills (inherited from my mother) have sharpened the visual instincts that allow me to add ingredients without measuring them. I only use measures while baking.

Since Avi, our son, mostly likes international cuisines, I keep on cooking and experimenting with different world cuisines to satiate his taste buds. Homemade Paneer Tacos are one of those food items that he loves! Shhhh (don't share the secret that Mexican food resembles Indian cuisine in some ways)! Especially, tortillas, the Mexican flatbread made of corn flour is actually Indian roti (chappati) which is made of whole wheat flour!
So, today I'm gonna talk about paneer (cottage cheese) tacos which I cook mostly on the weekends. Due to Covid19 restrictions, we aren't inviting family and friends. This means weekends are reserved to cook together and have a fiesta at home! :)

I wanted to create a nice cute fusion. Mexican spices are great for Indian cuisine. They are sharp, spicy, and bold. And they are very much loved by most of my family and friends.
I know that fusion dishes can be tricky if not prepared properly. Therefore, we try to improve them several times before sharing.
This is one of our favorite and most requested Indian Mexican fusion recipes. If you get bored with typical old food try this fusion! We know you will fall in love with this too.
Here's How You Can Sear Tortillas
Well, as I mentioned above, roti (chapati) is a part of our regular cuisine that we make every day. The only difference is that on most days we use whole wheat flour instead of cornflour used in tortillas. Although, on different days, we also use different kinds of flour to add variety, including cornflour and chickpea flour.
Coming back to today's Indian Mexican fusion recipe - Paneer Tacos, I love to char my tortillas well for that rustic flavor and crispiness.
If you have a gas burner, simply place the tortilla on the burner and wait a few seconds for them to char. Then use tongs to turn the tortilla over to the other side. You have to be careful and flip them quickly enough so as not to burn them.
If there is no gas burner, use a cast-iron skillet.

Place each flatbread in a dry cast-iron skillet over medium heat. After a minute, the underside will be well charred and ready to flip. After heating each side, fold the tortillas into a tea towel and fold.
Simple Ingredients For The Finest Paneer Tacos
We use fairly simple ingredients that are readily available. I also use the store-bought paneer to save time and effort. But, when making it on weekends, I definitely prefer homemade paneer. With some prep work, you should be able to make these tacos pretty quickly!
These ingredients should serve four people.
Paneer (Cottage Cheese):
1.1 lbs (approximately 500 gms)
To make the paneer more flavorful, I marinate it with lime juice and spices and let it sit for a few hours, then fry it in a pan. Also, I like to soak the paneer in warm water for 15-20 minutes and then use it. This will ensure that the paneer remains soft and less elastic.
Vegetables:
1 medium-sized green, yellow and red bell pepper. To be cut in around 1-inch cubes.
I like to use green, red, and yellow bell peppers. The variety of peppers imparts varied flavor and beautiful color to the dish. You can also add onions or zucchini to the mixture if you like. I personally like to add onions as it adds the right kind of earthy sweetness to this awesome Indian Mexican fusion recipe.
Green Cilantro Sauce:
You will need a bunch of cilantro, yogurt (about half a cup), 3-4 green chilies, 3-4 cloves of garlic, and salt to taste.
This simple sauce brings a wonderful flavor to these tacos. Using a high-speed blender, you need to turn the ingredients into a smooth puree. Alternatively, you can also use Indian cilantro and mint chutney.
Taco Seasoning and Marinade:
This is where the flavor explodes. I am using a taco seasoning from the store. Combined with lime juice and butter, this makes the marinade a superstar.
How To Make Paneer Tacos?
Here're the steps to prepare your rockstar paneer tacos:
- To make the marinade, add butter, lime or lemon juice, taco seasoning, and two tablespoons of water to a large bowl. Whisk until everything is well combined.
- Cut vegetables and paneer into small cubes. Be sure to remove the colored pepper pits.
- Add the marinade to the paneer and vegetable cubes. Stir until all pieces are well covered with marinade. Refrigerate for at least 1 hour.
- After an hour, remove the filling from the refrigerator. Heat a skillet over high heat. Drizzle some oil. Place Panner Vegetable Filling in one layer in the pan.
- Cook for 4-5 minutes over high medium heat, until the paneer, is browned. Vegetables should be crispy and tender. Remove the pan from heat. The filling is ready. Alternatively, you can also do this in an air fryer or oven.
- Meanwhile, make green cilantro chutney by mixing yogurt, cilantro leaves, green chili, garlic, and salt.
- Heat the tortillas in the microwave or bake them on the stove.
- Place the paneer and vegetable taco filling on each tortilla. Add additional filling, such as chopped cilantro, onions, or cheese, if desired. Pour green cilantro sauce over the filling.
- Fold the flatbread in the middle. Yes, the wait is over! The delicious paneer tacos are ready to be served :)
