Today I'm gonna reveal an easy bruschetta recipe that I perfected on my own! I have been inviting friends and relatives over the years and treated them to my delicious cuisines at my home. Bruschetta has been one of them. So, whenever I hear someone asking - "what is bruschetta"? I find it really intriguing.
I mean, bruschetta is something that I have been preparing for many years now and it is arguably one of my family's comfort food. So, I really find it amazing that people are still unaware of this awesome yet simple dish called bruschetta!

The reason I love bruschetta is that you can do so many variations with toppings. It could be as simple as having only tomatoes as a topping to having multiple toppings like mushroom, olives, jalapenos, red and yellow bell peppers with shredded cheese. For the non-vegetarians, chicken bruschetta is among the most popular ones.
Although bruschetta is a starter but most of the time we end up over-eating, leaving no space for anything else! :)
Today I have planned to reveal one of my personal favorite bruschetta recipes that is also easiest to prepare.

Classic Easy Bruschetta Recipe (I love to call my recipe Bruschetta Novella :)
Let's start with the bruschetta ingredients.

Extra virgin olive oil – this is the basic ingredient without which you can't prepare a bruschetta. I prefer extra virgin olive oil but regular olive oil works fine too.
Fresh crushed garlic – freshly crushed garlic is the soul of bruschetta. The easiest way is to chop garlic and then crush it with the knife head.
Tomatoes – you need to ensure that the tomatoes you pick are the garden-fresh, fully ripe red tomatoes. Personally, I love cherry tomatoes but they are not always available!
Balsamic vinegar – vinegar lends a sharp aromatic taste to bruschetta that's overpowering. This is precisely the reason I avoid using it. I insist that you should try this bruschetta recipe minus balsamic vinegar.
Black pepper and salt – for that little bit of spice that helps bring out the flavors.
French bread – sliced diagonally.
Finely chopped red and yellow bell peppers: the crunchy bell peppers adds zing to your bruschetta!
Jalapenos and black olives (sliced) – my bruschetta is truly different! I prefer using jalapenos and black olives (in brine) instead of balsamic vinegar. You are going to love these as toppings!
Finely shredded blended cheese – try the blended version of mozzarella and cheddar cheese instead of parmesan, as suggested by many. The blended cheese gives mouthwatering smoothness to your classy bruschetta!

Now, let's get into the action: let's prepare our yummy bruschetta! The method I use does not require any flame. So no need for pans and pots here!
I start by melting butter in the microwave. It takes less than 10 seconds for the consistency I need. Add garlic in butter. Add black pepper and a little salt.
TIP: if you don't have fresh garlic, try using garlic granules. I am simply loving it :)
Take the bread slices and place them on the baking tray. Apply this butter-garlic paste on every bread slice. Toss finely chopped tomatoes, bell peppers, jalapenos, and black olives. Sprinkle each slice with cheese liberally and finally drizzle olive oil for the bright and beautiful bruschetta novella!
Now, the baking tray is ready to go into the oven. I prefer using the microwave + grill mode (Combi Mode). It should take around 10 minutes for the cheese to melt. When the cheese begins to melt, you should switch off the microwave and remove the baking tray immediately.

What Kind of Bread Should I Serve With Classic Bruschetta?
9 out of 10 times I choose french loaf and you bet, that's the best one for this recipe.
If you don’t like french bread for whatever reason, or it is simply not available, you can serve classic bruschetta on regular whole wheat bread.
How Long Does Fresh Bruschetta Keep?
Well, a well-made bruschetta will never last beyond a few minutes! You just can't keep bruschetta back in the fridge as the toppings will become soggy within no time. And the toasted side of the bread will become hard after some time.
In simple words, bruschetta should be eaten hot and fresh. I hope you are going to try this yummy recipe tonight.
